Switchback Grille opened in Springdale in 1996 — the front edge of the modern Zion tourism wave, before the canyon shuttle, before the parking-lot bottlenecks, before “Springdale” became its own dining brand. Dan and Mike Marriott conceived the restaurant as Zion’s original prime steakhouse, and at 1149 Zion Park Blvd it has held that position for nearly thirty years. The format from day one was fine-dining steak and seafood out of a high-ceilinged room across from the Driftwood Lodge cluster, with an attached Trading Company retail space sharing the parcel.

Three Decades of Prime Cuts

The kitchen runs prime cuts, fresh fish, and a wine list that has built a reputation across the Springdale corridor. The format hasn’t drifted far from the original premise — Switchback was a steakhouse in 1996 and is a steakhouse now, and the menu over thirty years has tightened rather than expanded. That kind of formal continuity is uncommon in tourist-corridor restaurants, where most kitchens reformat every five to ten years to chase whatever the visitor demographic is doing. Switchback held its lane and let the Springdale dining market grow up around it.

The Trading Company Side

The attached Switchback Grille & Trading Company retail concept shares the parcel with the restaurant, and the combined name shows up on TripAdvisor and on some listings. The relationship between the two — same operating entity or separate — is not surfaced clearly in public sources. Surfaced public listings reference “Michael M.” as a current owner figure, almost certainly Mike Marriott, but the public web does not confirm whether he is still the operating owner of record nearly three decades on. That is the cleanest gap in the listing, and a phone call from local QA would close it.
