Switchback Grille opened in Springdale in 1996 — the front edge of the modern Zion tourism wave, before the canyon shuttle, before the parking-lot bottlenecks, before “Springdale” became its own dining brand. Dan and Mike Marriott conceived the restaurant as Zion’s original prime steakhouse, and at 1149 Zion Park Blvd it has held that position for nearly thirty years. The relationship between the two — same operating entity or separate — is not surfaced clearly in public sources.
