Positano Italian Kitchen and Wine Bar opened at 1501 S River Road in St. George as the Italian project of brothers Cameron and Royce Payne. Cameron is the chef on the Las Vegas Strip resume — Wolfgang Puck at MGM, Spago at Caesars, Postrio at the Venetian — and Twisted Noodle Cafe downtown is his original St. George operation. Positano is the higher-end of the brothers’ two St. George concepts: handmade pastas, fresh fish, a focused wine list, an open kitchen, and a room that runs busier and more polished than the Main Street cafe.
A Strip Resume Pointed at River Road
River Road has filled in steadily across the last decade — strip pads, restaurants, the kind of corridor that would have been desert and undeveloped twenty years ago and now reads as the south-side dining spine of St. George. Positano landed on that corridor at a moment when the demographic was tipping toward more chef-driven concepts and away from the franchise-restaurant default. The Payne brothers’ bet on a serious Italian kitchen at 1501 S River Road has paid off in a steady booking volume that the casual format at Twisted Noodle wasn’t built for.
Two Concepts, Two Brothers, One Operator
The shared ownership across two concepts is publicly confirmed: Cameron and Royce Payne run both Twisted Noodle Cafe and Positano. Multi-concept ownership at the chef-owner level is rare in St. George — most working chef-owners run a single room — and the Payne brothers’ two-concept structure is one of the cleaner cases on the sheet. Whether the two operations share a single operating LLC or run as separate entities under shared ownership isn’t surfaced publicly, and that’s part of what the register can resolve.
