Hank and Kathy Moore came back from a trip through Italy and France with the idea of outdoor dining stuck in their heads. Stopped at Oscar’s Cafe in Springdale on the way through. Told the then-owner, half-jokingly, that they would buy the place if he ever wanted to sell. He called them the next day. That’s the acquisition story Hank and Kathy tell on the brand’s about page, and it is the kind of opening sentence — short, specific, slightly improbable — that small-town restaurant histories tend to actually contain.
A Patio at the South End of Zion Park Blvd
Oscar’s runs out of 948 Zion Park Blvd, in the south-end cluster of Springdale that fills first when the canyon traffic backs up. The covered patio is the room’s identity — the Moores built around the outdoor-dining inspiration they brought back from Europe, and the patio has become the default reason regulars come back. Indoor seating exists, but most of the breakfast service spills outside under the cover, with red rock visible past the railing. The kitchen runs from open to mid-afternoon; dinner is not the play.
New Mexican Heat and Green Chili Burritos
The menu leans New Mexican — green chili breakfast burritos, posole, southwest-leaning lunch plates — and the kitchen has held that identity across the Moores’ tenure. Springdale gets enough park traffic that any restaurant on the boulevard could survive on tourist volume alone, but Oscar’s has built a Southern Utah following beyond the visitor cycle. The breakfast crowd skews local and repeat. The Moores tend to be in the room.

For a register of locally rooted Southern Utah businesses, Oscar’s is a clean, owner-operated Springdale listing with a documented acquisition story. The Moores didn’t build the cafe from zero — they bought a working business — but they built the version of it that exists now, and the patio orientation that defines the room is theirs. Springdale has its share of tourist-corridor restaurants that turn over with each seasonal cycle; Oscar’s is one of the rooms that has held its identity through more than one of those cycles, which is the kind of continuity the register exists to surface.
