The Painted Pony sits up the Tower stairs at Ancestor Square — the brick block at 2 W St. George Blvd that locals have been steering visitors toward for as long as downtown has had a downtown. Randall Richards and Nicki Pace bought the restaurant from Nicki’s family in 2004 and ran it for two decades as one of the few sit-down fine-dining rooms anywhere in Southern Utah that wasn’t a steakhouse or a casino expansion. In February 2025, they sold to longtime executive chef Lissie Vorberg and her husband Nick — the kind of inside handoff that is rare in this stretch of the corridor, where most ownership turnover happens through outside money rather than the kitchen.
Ancestor Square and the Pace Family
The Painted Pony’s address is the same Ancestor Square block as George’s Corner Restaurant & Pub, which is owned by the same Nicki Pace — now Nicki Richards — through her family’s longer history with the building next door. The 2 W St. George Blvd block is small enough that the two restaurants share a parking lot and, until recently, shared an owner. Selling Painted Pony in 2025 narrowed her operating footprint to George’s Corner alone, and the Vorbergs took over a kitchen they had already been running for years.
A Chef Buying the Restaurant She Already Ran
Chef Lissie Vorberg trained at Le Cordon Bleu in Chicago and worked under the Richards-Pace ownership long enough that the menu she runs now is mostly the menu she built. Organic sourcing, seasonal rotation, ingredients pulled in part from Richards’ own acreage — those structures stayed in place through the sale. The room itself is small, with contemporary art on the walls and the same staff developed over twenty years. The Painted Pony is a DiRōNA-recognized restaurant, one of a thin band of Southern Utah independents that pull that kind of award.
