Kris and Bindi Parikh started Mint Indian Bistro in a Las Vegas strip center in 2008 — a husband-and-wife team building a tandoor-driven North Indian menu in a market that already had plenty of cheap buffets and not much else. The brand grew across three Nevada storefronts in the Las Vegas Valley before the Parikhs crossed the Virgin River Gorge in 2025 to open their fourth location at 918 N 2720 E in St. George, on the east side off Mall Drive. It is the kind of expansion the corridor has seen often in the post-2018 build-out of that side of town: a Las Vegas concept with established systems, opening in a strip pad once the demographics tipped.

From Flamingo to Mall Drive

The Parikhs’ first room sat on Flamingo in Las Vegas. They added Durango and Henderson over the years, and the brand identity stayed unified — the four locations share one website, one menu, and one founder narrative across both the Vegas and St. George brand pages. The St. George kitchen runs the same tandoor program as Flamingo: North Indian classics, vegetarian thalis, biryanis, and a daily lunch buffet that has been the brand’s anchor since opening day in 2008. Hours are Sunday, Monday, Wednesday, and Thursday 11:00–21:00, Friday and Saturday until 21:30, closed Tuesdays.

Mall Drive in 2025

The St. George storefront opened in 2025 in a strip pad off Mall Drive — a corridor that, fifteen years ago, was scrub between Bluff Street and the river and is now one of the densest restaurant-and-retail strips in Washington County. Mint sits in the band of newer-arrival concepts that rode in on the wave of growth around the second hospital and the post-pandemic move-in tide. The brand’s Facebook announcement framed the opening as the same brand expanding to a new city, not a separate franchise — same “we,” same menu, same Parikh signature.
