Tyler and Esther Brinkerhoof purchased one of the oldest commercial buildings in Glendale in 2023 and reopened it as Brink’s Grill & Country Store — a Mongolian stir-fry grill and convenience store combination operating at 10 North Main Street, on the main block of a town of fewer than 400 people in Utah’s Long Valley.
The building itself is a piece of Kane County history: it is remembered by locals as a general store that was, for a long time, the place you went for ice cream and candy. The Brinkerhoffs restored the commercial function while adding the grill — an all-you-can-eat Mongolian buffet format with proteins, noodles, vegetables, and sauces, alongside desserts and hand-dipped hard ice cream. A trading post with regional goods operates alongside the grill and the convenience store inventory.
What the Brinkerhoffs built is a hybrid that fits a town where single-purpose retail cannot sustain itself: the same building that stocks the staples you need for the drive also feeds you a full dinner. Glendale sits on Highway 89 in the Long Valley corridor between Kanab and Mt. Carmel Junction — a stretch of road that sees Zion-bound and Bryce-bound traffic year-round.
